Stir Fry Udon Noodles is a quick and delicious dish featuring chewy noodles, vibrant vegetables, and a savory sauce. Perfect for busy weeknights, this flavorful one-pan meal is customizable and satisfying.
1 package udon noodles (thick, about ½ pound)
2 tablespoons sesame oil
2 green onions, thinly sliced
½ red bell pepper, thinly sliced
1 cup green beans, sliced
1 carrot, thinly sliced
Sesame seeds (for garnish)
For the Sauce:
¼ cup soy sauce
¼ cup water
¼ cup hoisin sauce or oyster sauce
2 garlic cloves, minced
2 tablespoons ginger, minced
1 tablespoon sugar
1 tablespoon cornstarch
Cook the udon noodles according to the package instructions. Drain and set aside.
In a small bowl, whisk together soy sauce, water, hoisin or oyster sauce, garlic, ginger, sugar, and cornstarch. Set aside.
Heat sesame oil in a large pan or wok over medium-high heat. Add green onions, red bell pepper, green beans, and carrot. Stir fry for 3-4 minutes until vegetables are tender-crisp.
Add the cooked udon noodles to the pan with the vegetables. Pour the sauce over and stir to coat evenly. Cook for another 2-3 minutes, letting the sauce thicken and the noodles absorb the flavors.
Sprinkle sesame seeds and additional green onions over the stir fry. Serve immediately.
Add Protein: For a heartier meal, stir in cooked chicken, shrimp, beef, or tofu in step 4.
