Strawberries and Cream Chia Pudding is a delicious and nutritious dessert or breakfast that combines the refreshing sweetness of strawberries with the creamy texture of chia pudding. Its two-layered structure offers both a fruity bottom and a smooth, sweetened chia top.

Ingredients

Bottom Layer:

½ cup strawberries

¼ cup milk

1 tsp chia seeds

Top Layer:

½ cup milk

2 Tbsp chia seeds

2 tsp maple syrup

½ tsp vanilla extract

Instructions

  1. Prepare the Bottom Layer:
    • In a blender or food processor, combine the strawberries, milk, and 1 tsp chia seeds. Blend until smooth.
    • Pour the strawberry mixture into the bottom of a jar, glass, or bowl.
    • Refrigerate for at least 2 hours or overnight to allow the chia seeds to thicken the strawberry layer.
  2. Prepare the Top Layer:
    • In a separate bowl or jar, mix the remaining milk, 2 tbsp chia seeds, maple syrup, and vanilla extract. Stir well to combine.
    • Let the top layer sit for 5-10 minutes and stir again to ensure the chia seeds are evenly distributed.
  3. After the bottom layer has set, pour the top layer over the strawberry mixture.
  4. Return the jar or bowl to the refrigerator for an additional 2 hours, or overnight, to allow the chia seeds to thicken and set into a creamy pudding-like consistency.
  5. Once the pudding has set, stir gently and enjoy! Optionally, top with additional fresh strawberries or a drizzle of honey.

Notes

This recipe can be made dairy-free by using almond, coconut, or oat milk.

If using frozen strawberries, be sure to thaw them first for a smoother consistency.

You can customize the bottom layer with other fruits like raspberries, blueberries, or mango.

This pudding is perfect for meal prep; simply make it the night before for a quick breakfast or snack the next day.
