Strawberry Sando Tea Sandwiches are a delightful Japanese-inspired treat featuring fresh strawberries and fluffy whipped cream sandwiched between soft white bread. Perfect for afternoon tea or a light dessert, these sweet sandwiches are elegantly simple and refreshingly delicious.

Ingredients

Fruit

  • 9 small strawberries

Whipped Cream

  • ½ cup heavy cream
  • 3 teaspoons sugar
  • 1 teaspoon vanilla extract
  • 2 pinches of salt

Bread

  • 2 slices white bread (or milk bread)

Instructions

  1. Prep the strawberries: Wash and dry the strawberries thoroughly. Remove the leafy green tops, then slice each strawberry flat side down and place them on a paper towel to absorb excess moisture.
  2. Make the whipped cream: Pour the heavy cream into a large bowl. Using a hand mixer, whisk the cream until it starts to bubble. Add the sugar, vanilla extract, and salt, then continue whipping until stiff peaks form, resulting in a thick and stable whipped cream.
  3. Assemble the sandwich: Lay one slice of bread on a piece of plastic wrap. Spread a layer of whipped cream over it to cover the surface. Arrange the strawberries in a neat row of three, from top to bottom. Then spread more whipped cream over the strawberries to cover them completely and fill any gaps. Place the second slice of bread on top, and use additional whipped cream to cover the sides of the sandwich. Wrap the entire sandwich tightly with plastic wrap.
  4. Chill the sandwich: Place the wrapped sandwich between two plates, with the flat plate on top to gently press it down while setting. Refrigerate for 2 to 3 hours to allow the whipped cream to firm up and the flavors to meld.
  5. Cut and serve: Keeping the plastic wrap on, trim off the crusts from the sandwich. Remove the plastic wrap, then cut the sandwich in half. Serve immediately to enjoy the creamy, fresh strawberry sandwich at its best.

Notes

  • Use fresh, ripe strawberries for the best flavor and sweetness.
  • Milk bread can be used as a softer alternative to white bread for a more authentic texture.
  • Wrap the sandwich tightly to prevent the whipped cream from drying out in the fridge.
  • Chilling the sandwich is essential to firm up the whipped cream and keep the sandwich intact when cut.
  • Consume the sandwiches within the same day for optimal freshness.
