These delightful Strawberry Sandwiches are a quick and easy no-bake treat perfect for a light snack or tea time. Soft whipped cream cheese blended with sweet strawberry jam and vanilla is spread between slices of bread layered with fresh strawberry slices. You can make charming heart-shaped sandwiches for a festive look or keep them simple by cutting off the crusts. Ready in just 20 minutes, they offer a fresh, creamy, and fruity bite that’s sure to please the whole family.

Ingredients

Bread

  • 6 slices bread (wheat, white, or a mix of both)

Filling

  • 6-7 strawberries (thinly sliced and patted dry)
  • 6 ounces cream cheese (softened, about 188 grams)
  • 3 tablespoons strawberry jam
  • 2 teaspoons milk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Prepare the cream cheese mixture: Use a hand or stand mixer to whip the softened cream cheese, strawberry jam, milk, and vanilla extract together in a large bowl. Mix until the ingredients are fully combined and the cream cheese becomes light and fluffy, ensuring a smooth and spreadable texture.
  2. Spread mixture on bread: Evenly divide the whipped cream cheese mixture onto each slice of bread, spreading it in an even layer to cover the surface completely for balanced flavor in every bite.
  3. Cut out sandwich shapes (optional): If you want to create appealing mini sandwiches, use a cookie cutter to cut out 4 heart shapes from each slice, being careful not to cut into the crusts and keep the cream cheese side facing up. Alternatively, you may keep the sandwiches whole and slice off the crusts for a cleaner presentation.
  4. Assemble the sandwiches: Place a single layer of thinly sliced strawberries on one cut-out bread piece, then top it with another cut-out piece to form a sandwich. Repeat this process until you have assembled all 12 mini sandwiches or 3 full-sized sandwiches that can be cut into 4 triangles each.
  5. Serve and enjoy: Arrange the strawberry sandwiches on a platter and serve immediately to enjoy the fresh, creamy, and fruity flavors at their best.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture.
  • Softened cream cheese whips better; allow it to reach room temperature before mixing.
  • You can substitute strawberry jam with raspberry or any berry jam for a flavor twist.
  • For a gluten-free version, use gluten-free bread.
  • These sandwiches are best served fresh but can be refrigerated for up to 4 hours before serving.
