This Strawberry Scooter Crunch Cake combines a delightful crunchy Oreo and strawberry gelatin crust with a moist yellow cake swirled with strawberry jam, topped off with a light, fluffy Cool Whip frosting. It’s a vibrant, flavorful dessert perfect for gatherings and celebrations.

Ingredients

Crust

  • 2 dozen Golden Oreos
  • 1 3 oz box strawberry gelatin
  • 1/3 cup butter

Cake

  • 1 box yellow cake mix
  • 3 eggs
  • 1 cup butter, melted
  • 1/2 cup milk
  • 1/2 cup strawberry jam

Frosting

  • 1 12 oz tub Cool Whip
  • 3/4 cup powdered sugar

Instructions

  1. Preheat Oven and Prepare Crust: Preheat the oven to 325 degrees Fahrenheit. Place the Golden Oreos in a food processor and pulse until the pieces are finely ground.
  2. Combine Crust Ingredients: Add the strawberry gelatin and butter to the crushed Oreos in the food processor. Pulse a few more times until the mixture is evenly combined.
  3. Bake Crust: Spread the Oreo and gelatin mixture evenly onto a baking sheet and bake for 10 minutes. Remove from the oven and cool completely.
  4. Prepare Cake Pan: Increase oven temperature to 350 degrees Fahrenheit. Spray a 9 x 13 inch baking pan with baking spray and set aside.
  5. Mix Cake Batter: In a large bowl, whisk together the yellow cake mix, eggs, milk, and melted butter until the batter is mostly smooth.
  6. Pour Base Batter: Pour two-thirds of the cake batter into the prepared pan evenly.
  7. Create Strawberry Swirl Batter: Add the strawberry jam to the remaining one-third of the cake batter and mix until smooth.
  8. Swirl Batter: Place dollops of the strawberry batter on top of the base batter in the pan. Use a butter knife to gently swirl the two batters together creating a marbled pattern.
  9. Bake Cake: Bake the cake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool Cake: Remove the cake from the oven and allow it to cool completely in the pan.
  11. Prepare Frosting: In a bowl, beat together the Cool Whip and powdered sugar on high speed for one minute until smooth and creamy.
  12. Frost Cake: Spread the Cool Whip frosting evenly over the cooled cake.
  13. Add Crunch Topping: Sprinkle the cooled strawberry crunch Oreo mixture over the frosted cake as a topping.

Notes

  • For best texture, ensure the cake has completely cooled before frosting to prevent the topping from melting.
  • You can substitute the strawberry jam with raspberry or another berry jam for a different fruity swirl.
  • If you don’t have a food processor, place the Oreos in a large zip-lock bag and crush with a rolling pin.
  • This cake serves well refrigerated and tastes even better chilled for a few hours.
  • Be careful not to overmix the swirl batter to preserve the marbled effect.
