A refreshing summer fruit salad made with strawberries, peaches, blueberries, and fresh herbs tossed in a tangy-sweet lemon and balsamic dressing. Perfect for picnics, barbecues, or a light and healthy dessert.

Ingredients

1 pound strawberries, hulled and thinly sliced

3 medium peaches, thinly sliced (peeled if desired)

6 ounces (1 cup) blueberries

1 heaping tablespoon fresh chopped basil or mint

2 tablespoons lemon juice (about 1 medium lemon)

1 tablespoon maple syrup or honey

2 teaspoons balsamic vinegar

Instructions

  1. Prepare strawberries, peaches, and blueberries as directed.
  2. Place fruit in a large mixing bowl.
  3. Whisk together lemon juice, maple syrup or honey, and balsamic vinegar in a small bowl.
  4. Pour dressing over fruit and gently toss to coat.
  5. Sprinkle with chopped basil or mint and toss lightly again.
  6. Serve immediately, or refrigerate for up to 1 hour before serving.

Notes

Add watermelon or cantaloupe for extra juiciness.

Swap basil or mint with thyme for a different flavor.

Use nectarines or plums instead of peaches.

Top with feta or goat cheese for a sweet-savory twist.

Mix in toasted nuts for crunch.
