Ingredients

Steak and Seasoning

  • 3 pounds tri-tip (1.4 kilograms)
  • 1/2 cup tri-tip dry rub (90 grams) or store-bought dry rub

Garlic Butter Sauce

  • 6 Tablespoons good-quality salted butter, cubed (85 grams)
  • 1 1/2 Tablespoons minced garlic (~6-8 cloves / 20 grams)
  • 2 teaspoons minced fresh rosemary
  • Chopped fresh parsley, for garnish

Instructions

  1. Prep the Steak: Using a sharp knife, trim any extra fat or silver skin from the tri-tip. Cut the steak into 1 to 1 1/2 inch cubes, then pat dry with paper towels.
  2. Season the Steak: Toss the steak cubes with the dry rub until all sides are evenly coated. Let the seasoned steak come to room temperature.
  3. Grill the Steak Bites: Preheat the grill to 400°F (204°C) and grease the grates with neutral oil. Thread steak cubes onto metal skewers, leaving a small gap between each bite for even cooking.   4. Prepare Garlic-Rosemary Butter: While steak rests, melt butter in a large skillet over medium heat. Add garlic and rosemary, cooking 30-60 seconds until fragrant.
  5. Serve: Drizzle the garlic-rosemary butter over the steak bites, garnish with fresh parsley, and serve immediately.
  6. Alternative Cast Iron Method – Sear the Steak Bites: Heat a drizzle of neutral oil in a large cast iron skillet over medium-high until shimmering. Add steak cubes in batches without crowding and sear about 1 minute per side until browned and internal temperature reaches 125°F (52°C).
