A rich, spiced apple butter made easily in the Instant Pot without peeling the apples. Smooth, flavorful, and perfect for spreading, swirling, or baking.

Ingredients

6 pounds apples (Honeycrisp and Gala recommended), cored and roughly chopped, skins left on

½ cup unsweetened apple cider (no added spices)

1 cup dark brown sugar

½ teaspoon ground allspice

½ teaspoon ground cloves

2 cinnamon sticks

1 tablespoon vanilla extract

½ teaspoon kosher salt

Instructions

  1. Core and roughly chop the apples, leaving the skins on.
  2. Add apples, apple cider, brown sugar, allspice, cloves, cinnamon sticks, vanilla, and salt to the Instant Pot. Stir to combine.
  3. Secure the lid and cook on high pressure for 15 minutes.
  4. Allow a natural release for 10 minutes, then vent the remaining steam.
  5. Remove the cinnamon sticks and use an immersion blender to puree the mixture until smooth.
  6. If a thicker consistency is desired, turn on the sauté function and cook uncovered, stirring occasionally, until thickened.
  7. Let cool completely before transferring to jars for storage.

Notes

Swap brown sugar with maple syrup or honey for a different flavor.

Add nutmeg or ground ginger for extra spice.

For less sweetness, reduce the sugar or rely on naturally sweet apples.

Can be made on the stovetop or in a slow cooker instead of an Instant Pot.

Store in the fridge up to 3 weeks, or freeze up to 6 months.

For shelf-stable storage, process in a water bath canner using safe canning guidelines.
