Ingredients

Chicken Wings

  • 4 lbs. drums and flats bone-in skin-on chicken wings
  • 1 Tbsp kosher salt
  • 1 Tbsp baking powder
  • 1 tsp garlic powder

Sauce

  • ¾ cup honey
  • 2 Tbsp soy sauce
  • 1 Tbsp Sambal Oelek or other chile paste
  • ½ tsp cayenne pepper
  • 2 tsp garlic powder
  • 6 Tbsp unsalted butter – room temperature
  • Chopped parsley or chives for garnish

Instructions

  1. Prepare the Wings: Pat the chicken wings dry thoroughly with paper towels. Place them on a wire rack set over a large baking sheet. Refrigerate the wings uncovered for at least 30 minutes, preferably up to an hour, to dry out the skin which helps achieve crispiness during baking.
  2. Preheat the oven: Preheat your oven to 400°F (200°C). If you have a convection setting, use it for crisper wings; otherwise, a conventional oven will work fine.
  3. Season the Wings: In a small bowl, mix together kosher salt, baking powder, and garlic powder. Remove the wings from the refrigerator and place them in a large mixing bowl. Sprinkle the seasoning mixture over the wings and toss to coat evenly. Spray the wire rack with nonstick cooking spray, then arrange the wings in a single layer on the rack, making sure they do not touch each other to allow even air circulation.
  4. Bake the Wings: Place the wings in the preheated oven. Bake for about 35 minutes if using a convection oven, or approximately 45 minutes in a conventional oven. Check the wings for doneness by ensuring their internal temperature reaches 165°F (74°C) and the skin is crispy. Adjust cooking time as needed.
  5. Prepare the Sauce: While the wings bake, combine honey, soy sauce, Sambal Oelek, cayenne pepper, and garlic powder in a small saucepan over low heat. Whisk the ingredients and bring to a gentle simmer. Let the sauce cook on low for about 5 minutes. Remove from heat and whisk in the room temperature unsalted butter until fully combined, creating a smooth, glossy glaze. Keep the sauce warm but do not boil if making ahead.
  6. Glaze the Wings: Once wings are fully cooked and crispy, transfer them to a large bowl. Pour the prepared honey garlic sauce over the wings and toss gently but thoroughly to coat every piece evenly with the sauce.
