  • 1 teaspoon kosher salt (or to taste)
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the Oven: Set your oven to 400°F (204°C) to have it ready for baking the eggs later in the skillet.
  2. Partially Cook Sweet Potatoes: Place the peeled and cubed sweet potatoes into a microwave-safe bowl with 2 tablespoons of water. Cover it loosely with plastic wrap, piercing a small slit to allow steam to escape, then microwave for 2 minutes. Stir and microwave for an additional 2 minutes until the potatoes are soft but not fully cooked.
  3. Brown the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage in a single layer without stirring. Let it cook undisturbed for 1-2 minutes until browned, then flip and cook for another 1-2 minutes to achieve a lightly crisp exterior. Remove the sausage from the skillet and set aside.
  4. Sauté Vegetables and Sweet Potatoes: Add the remaining tablespoon of olive oil to the skillet along with the sliced green onions, chopped red bell peppers, and partially cooked sweet potatoes. Season with kosher salt, black pepper, smoked paprika, and garlic powder. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender.
  5. Combine Sausage and Veggies: Return the browned sausage to the skillet and stir everything together to combine well with the sweet potato and vegetable mixture.
  6. Create Wells and Add Eggs: Using a spoon, make four small wells in the hash mixture in the skillet. Crack an egg into each well carefully, making sure not to break the yolks.
