6-8 medium Yukon Gold potatoes (if large, cut in half)
Water to cover
1 tsp sea salt (divided)

Instructions
Prepare the Potatoes: Peel the Yukon Gold potatoes if desired and cut any large potatoes in half to ensure even cooking. Place them in a large pot and cover with cold water. Add 1/2 tsp of sea salt to the water.
Cook the Potatoes: Bring the water to a boil over medium-high heat. Cook the potatoes until they are fork-tender, about 15-20 minutes depending on size. Drain the potatoes thoroughly in a colander.
Prepare the Garlic: If using raw garlic, you can add it directly to the potatoes for a stronger flavor or use roasted garlic for a milder, sweeter taste. Alternatively, sauté minced garlic in 1 tablespoon of olive oil over medium heat for 3 minutes until fragrant and lightly golden.
Mash the Potatoes: Return the drained potatoes to the pot or a large bowl. Add the vegan butter, cooked or raw garlic, remaining 1/2 tsp sea salt, and 1/2 tsp ground black pepper. Mash together using a potato masher or a fork until smooth and creamy, adding a splash of water or plant-based milk if needed for desired consistency.
Finish and Serve: Taste and adjust seasoning as needed. Transfer the mashed potatoes to a serving dish and sprinkle with fresh chives if using. Serve warm as a comforting side dish.
