Ingredients

1000 Island Dressing

  • 2/3 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/3 cup ketchup
  • 2/3 cup dill pickle relish
  • 1 tsp Worcestershire sauce
  • 2 tsp hot sauce
  • 1/2 tsp honey
  • 1/4 tsp salt

Pinwheels

  • 2 extra large tortilla wraps (largest size available)
  • 1/3 pound Boar’s Head Hard Salami (or preferred hard salami)
  • 1/3 pound Boar’s Head Roast Beef (or preferred roast beef)
  • 4 oz Organic Valley spreadable cream cheese
  • 2 jalapeños, deseeded and chopped into small pieces (about size of pinky nail)
  • 1 head of romaine lettuce, finely chopped

Instructions

  1. Prepare the 1000 Island Dressing: In a medium bowl, combine mayonnaise, Greek yogurt, ketchup, dill pickle relish, Worcestershire sauce, hot sauce, honey, and salt. Mix well until smooth and evenly blended. This dressing will add a creamy, tangy flavor to the pinwheels.
  2. Spread Cream Cheese: Lay the large tortilla wraps flat on a clean surface. Using a spatula or butter knife, evenly spread the 4 oz of organic spreadable cream cheese over each tortilla, covering the entire surface to help bind the fillings.
  3. Add Dressing and Meat Layers: Drizzle or gently spread a thin layer of the prepared 1000 Island dressing over the cream cheese on each tortilla. Then layer 1/3 pound of hard salami followed by 1/3 pound of roast beef evenly over each wrap.
  4. Add Jalapeños and Lettuce: Sprinkle the finely chopped jalapeños evenly across the meat layers, then top with finely chopped romaine lettuce, distributing it uniformly.
  5. Roll the Pinwheels: Carefully roll each tortilla wrap tightly from one end to the other, ensuring the ingredients stay packed inside. Once rolled, wrap them tightly in plastic wrap and refrigerate for at least 30 minutes to firm up and make slicing easier.
  6. Slice and Serve: Remove the wraps from the fridge and unwrap from plastic. Using a sharp knife, slice the rolls into 1 to 1.5 inch thick pinwheels. Arrange on a serving platter and enjoy immediately or keep chilled until ready to serve.

Notes

  • For a milder version, omit jalapeños or use fewer pieces.
  • Ensure tortillas are large enough to hold all ingredients without tearing.
  • Use spreadable cream cheese for easy and smooth spreading.
  • Refrigeration before slicing helps maintain shape and makes cutting cleaner.
  • The 1000 Island dressing can be made ahead and stored in the fridge for up to 3 days.
