  • 4 split-top brioche, New England style hot dog buns (with sides trimmed off)
  • 4 tablespoons butter, divided

Instructions

  1. Prepare the Lobster Meat: Rinse the lobster meat carefully to remove any loose shells. Drain thoroughly to prevent the mayo sauce from becoming watery. Chop or tear the meat into large chunks and set aside.
  2. Make the Dressing: In a large bowl, combine the minced celery, mayonnaise, chives, lemon juice, lemon zest, kosher salt, and freshly ground black pepper. Mix well and adjust seasoning to taste.
