The BEST Slow Cooker Steak Bites are tender, flavorful, and perfect for easy weeknight dinners or casual weekend meals. Juicy sirloin steak pieces are slow-cooked with sweet onions, garlic, and beef stock with au jus gravy, finished with butter and fresh parsley for a rich, savory dish.

Ingredients

3 pounds sirloin steak, cut into bite-sized pieces

2 teaspoons kosher salt

1 teaspoon black pepper

2 tablespoons vegetable oil

1 small sweet onion, thinly sliced

3 cloves garlic, thinly sliced

1 cup unsalted beef stock

1 ounce packet au jus gravy mix

4 tablespoons unsalted butter, thinly sliced

Fresh chopped parsley for garnish (optional)

Instructions

  1. Season steak pieces with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat. Sear steak pieces 1–2 minutes per side until browned. Transfer to slow cooker.
  3. Add sliced onion and garlic to the slow cooker. Pour in beef stock and sprinkle au jus mix. Stir to combine.
  4. Cover and cook on low 4–5 hours or high 2–3 hours until steak is tender.
  5. About 15 minutes before serving, add butter slices and stir to create a rich, glossy sauce.
  6. Garnish with parsley if desired and serve over rice, mashed potatoes, or noodles.

Notes

Spicy: add red pepper flakes or cayenne.
