The Clover Club Cocktail is a classic gin-based drink made with fresh raspberries, lemon juice, simple syrup, and egg white for a silky foam. It’s elegant, refreshing, and perfect for a special yet approachable cocktail.

Ingredients

¼ cup fresh raspberries, plus more for garnish

½ oz simple syrup

2 oz gin (such as The Botanist)

¾ oz fresh lemon juice (about ½ large lemon)

1 very fresh egg white

Instructions

  1. Add raspberries and simple syrup to a cocktail shaker and muddle until the berries are well broken down.
  2. Add the gin, lemon juice, and egg white.
  3. Shake without ice (dry shake) for about 15 seconds to create a foamy texture.
  4. Add ice to the shaker and shake again for another 15 seconds to chill the drink.
  5. Strain into a chilled coupe glass.
  6. Garnish with fresh raspberries before serving.

Notes

Use very fresh or pasteurized egg whites for safety.

Aquafaba (chickpea water) can be used as a vegan alternative to egg white.

Adjust sweetness by adding more simple syrup if desired.

Frozen raspberries can be used if fresh ones aren’t available.

Best served immediately for maximum foam and freshness.
