  • 1 cup dried mung beans
  • 1 cube chicken bouillon (10-12 grams)
  • 6 cups water
  • 1 bunch spinach leaves
  • 1-2 tablespoons fish sauce (optional)

Instructions

  1. Prepare Aromatics: Heat the vegetable oil in a pot over medium heat. Sauté the crushed garlic until fragrant, then add the diced onions and cook until translucent.
  2. Add Tomatoes and Meat: Stir in the diced tomatoes and cook until they soften. Add your choice of meat (beef, chicken, or shrimp) and cook until it starts to brown and is partially cooked through.
  3. Add Mung Beans and Broth: Rinse the dried mung beans and add them to the pot. Pour in 6 cups of water and add the chicken bouillon cube. Stir to dissolve the bouillon.
  4. Simmer: Bring the stew to a boil, then reduce heat to a simmer. Cover the pot and let it cook for 45-60 minutes or until the mung beans and meat are tender. Stir occasionally to prevent sticking.
  5. Add Spinach and Season: Once the beans and meat are tender, add the bunch of spinach leaves to the pot and cook until the spinach is wilted. Season with 1-2 tablespoons of fish sauce to taste, if desired.
  6. Final Adjustments and Serve: Taste the stew and adjust seasoning if needed. Serve hot as a comforting main dish.
