This vibrant and tangy Tomatillo Salsa is a fresh, flavorful dip made with roasted tomatillos, jalapeños, garlic, and cilantro. 1 lb Tomatillos (husks removed)
1 medium Jalapeño (use 2 for extra spicy)
2 cloves Garlic (whole, peeled)
1 tbsp Olive oil
1/3 cup Fresh cilantro
1/4 cup Onion (finely chopped)
1/2 tbsp Lime juice
1 tsp Sea salt (to taste)
Rinse the tomatillos under cold water to remove any sticky residue and cut them into halves or quarters for easier cooking.
Heat olive oil over medium heat in a medium pan. Add the tomatillos, jalapeño, and garlic. Sauté for 5–7 minutes, stirring occasionally until the tomatillos soften and start to blister.
Remove from heat and let the mixture cool for a few minutes. Transfer the contents to a blender or food processor.
Add the cilantro, onion, lime juice, and sea salt to the blender and blend until smooth.
Taste and adjust seasoning with more lime juice or salt if needed. Transfer to a bowl and serve immediately, or refrigerate for at least 30 minutes to allow the flavors to meld.
Spiciness: Adjust the number of jalapeños to control the heat level. For a milder version, remove the seeds from the jalapeños before blending.
Smokier Flavor: Add a roasted poblano pepper or smoked paprika for a deeper, smokier flavor.
Herb Variations: Swap cilantro for parsley or mint for a fresh twist.
