Ingredients

2 large ripe tomatoes, sliced (or 1 1/2 cups cherry tomatoes, halved)

1 large avocado, peeled, pitted, and sliced

8 oz fresh mozzarella, sliced or torn (bocconcini or ciliegine also work)

1/4 cup fresh basil leaves, whole or torn

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

Salt, to taste

Freshly ground black pepper, to taste

Instructions

  1. Arrange the tomato slices, avocado, and mozzarella on a serving platter, alternating them for a colorful display.
  2. Scatter fresh basil leaves over the salad.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad just before serving.
  5. Serve immediately while the avocado is fresh and vibrant.
