Tomato Mozzarella Salad is a refreshing, vibrant dish combining juicy tomatoes, creamy mozzarella, and aromatic basil, drizzled with a sweet and tangy balsamic reduction. This simple yet flavorful salad is perfect as a side dish, appetizer, or light meal on a warm day.

 

Ingredients

4 on-the-vine tomatoes

1 lb ball of fresh mozzarella

2 tbsp balsamic vinegar

10 fresh basil leaves

½ tsp sea salt

½ tsp pepper

Ingredients for Balsamic Reduction:

½ cup balsamic vinegar

2 tbsp brown sugar

Instructions

  • Prepare the balsamic reduction: In a small saucepan, combine balsamic vinegar and brown sugar. Bring to a simmer over medium heat. Stir occasionally and let it reduce for 5-10 minutes until it thickens. Set aside to cool.

  • Assemble the salad: Slice the tomatoes and mozzarella into ¼-inch thick rounds. Arrange them alternately on a serving platter, overlapping slightly.

  • Add the basil: Tear fresh basil leaves into smaller pieces and scatter them over the tomatoes and mozzarella.

  • Season: Drizzle balsamic vinegar over the salad, then sprinkle with sea salt and pepper.

  • Drizzle with balsamic reduction: Once the reduction has cooled, drizzle it generously over the salad.

  • Serve: Serve immediately or chill for 15 minutes before serving for a cooler option.

Notes

For added flavor, include olives or roasted vegetables.

Burrata cheese can be used for a creamier texture or goat cheese for a tangier twist.

The balsamic reduction can be prepared ahead and stored in the fridge for up to a week.

To make the salad vegan, swap the mozzarella with a plant-based alternative.
