These Tortilla Rollups with Dairy Free Veggie Cream Cheese are a light, healthy snack or appetizer packed with crunchy veggies and creamy, dairy-free spread. A perfect, customizable treat for any occasion, whether it’s a quick snack or a party platter!

Ingredients

1 recipe Dairy Free Veggie Cream Cheese Spread

1 bell pepper (cut into thin strips, any color)

2 carrots (halved and cut into thin strips)

3 radishes (halved and cut into thin slices)

1 small cucumber (halved and cut into thin strips)

Several handfuls of arugula

8 tortillas (your favorite)

Instructions

  1. Prepare the Veggies: Wash and prep the vegetables by cutting the bell pepper into thin strips, halving and slicing the carrots, radishes, and cucumber. Wash the arugula and pat dry with a paper towel.

  2. Prepare the Cream Cheese Spread: If you haven’t already, make the Dairy Free Veggie Cream Cheese Spread. This will be the creamy base for the rollups.

  3. Assemble the Rollups: Lay out the tortillas flat on a surface. Spread a generous layer of the dairy-free veggie cream cheese across the surface of each tortilla.

  4. Add the Vegetables: Lay the prepared veggies (bell pepper, carrot, radish, cucumber) in the center of each tortilla. Add a handful of arugula on top of the veggies.

  5. Roll and Slice: Roll up each tortilla tightly, folding in the sides as you go to create a neat roll. Slice the rolled tortillas into 1-inch pieces using a sharp knife.

  6. Serve: Arrange the rollups on a platter and enjoy!

Notes

Storage: Keep the rollups in an airtight container in the refrigerator for up to 2-3 days. If you have leftovers, you can cover the platter with plastic wrap or foil.

Customizations: Add protein by including tofu, tempeh, or chickpeas. Swap veggies or add avocado slices for variety. Spice them up with chili flakes or jalapeños.
