Tourtière Burger

Tourtière burgers are a French-Canadian inspired twist on classic burgers, featuring spiced beef patties, creamy maple mustard aioli, sautéed mushrooms, melted oka cheese, and fresh toppings on brioche buns.

Ingredients

Patties:

1 tbsp olive oil

½ onion, finely diced

1 lb ground beef

¼ cup breadcrumbs

1 egg, beaten

2 tsp kosher salt

1 ½ tsp dried summer savoury

½ tsp allspice

½ tsp ground cloves

¼ tsp pepper

Maple Mustard Aioli:

½ cup mayonnaise

1 tbsp maple syrup

1 tbsp grainy mustard

1 tsp Dijon mustard

½ tsp kosher salt

⅛ tsp pepper

To Serve:

1 tbsp olive oil

2 cups sliced mushrooms

6 slices oka cheese (or Gruyère/Havarti)

6 brioche burger buns

6 lettuce leaves

6 pickle slices

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté onion until softened and lightly golden, then let cool.
  2. In a bowl, combine beef, breadcrumbs, egg, sautéed onion, salt, summer savoury, allspice, cloves, and pepper. Mix gently and form into 6 patties.
  3. Cook patties in a skillet or on the grill for 4–5 minutes per side until browned and cooked through.
  4. Meanwhile, heat 1 tbsp olive oil in a skillet and sauté mushrooms until golden and tender.
  5. In a small bowl, whisk mayonnaise, maple syrup, grainy mustard, Dijon, salt, and pepper to make the aioli.
  6. During the last minute of cooking, top each patty with a slice of cheese and cover pan to melt.
  7. Toast brioche buns lightly and spread aioli on both sides.
  8. Assemble burgers with lettuce, cheesy patty, sautéed mushrooms, pickle slices, and extra aioli if desired.

Notes

Gruyère, Havarti, or cheddar can replace oka cheese.

Add caramelized onions or arugula for extra flavor.

Patties can be frozen raw and cooked from frozen with extra time.

Make the aioli spicier with cayenne or hot sauce.
