Ingredients

2 lbs fresh boneless cod loins

¼ cup butter

½ small onion, finely chopped

2 garlic cloves, minced

¼ cup corn starch (or potato starch)

1 tbsp Dijon mustard

¼ cup dry white wine

2 ¼ cups milk

⅔ cup shredded Parmesan cheese

1 cup shredded cheddar cheese

2 tsp dried summer savory

Salt and pepper, to taste

1 small bag plain potato chips, crumbled

Instructions

  • Preheat oven to 375°F (190°C).

  • Butter a baking dish and arrange cod loins evenly; season with salt and pepper.

  • Melt butter in saucepan over medium heat. Sauté onion and garlic until translucent (~3-4 mins).

  • Stir in corn starch and Dijon mustard. Gradually whisk in white wine and milk, stirring constantly.

  • Cook sauce until thickened (~5-7 mins). Remove from heat; stir in Parmesan, cheddar, and summer savory. Adjust seasoning.

  • Pour cheese sauce evenly over cod.

  • Sprinkle crumbled potato chips on top for crunch.

  • Bake 25–30 minutes until bubbly and topping is golden.

  • Let rest 5 minutes before serving.

Notes

Use seasoned panko breadcrumbs instead of chips for a different crunch.

Add fresh thyme or parsley for extra herb flavor.
