These Tree Veggie Skewers are a fun and festive way to enjoy fresh vegetables and cheese, perfect as a healthy snack or appetizer. The crisp cucumbers, juicy cherry tomatoes, and creamy white cheese come together on wooden skewers to create a visually appealing and delicious treat that resembles little trees.

Ingredients

Veggies and Cheese

  • 2 cucumbers
  • 1 small container cherry or grape tomatoes (about 1 cup)
  • 1 small block white cheese (Pepper Jack, Monterrey Jack, or Swiss) – about 6 oz

Others

  • Wooden skewers, medium length, about 6-8 inches long

Instructions

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly. Slice each cucumber into thick rounds, about 1/4 inch thick, to serve as the base portion of your skewers.
  2. Slice the Cheese: Cut the block of white cheese into similarly sized cubes or small slices that will stack well on the skewers along with the vegetables.
  3. Prepare the Tomatoes: Rinse the cherry or grape tomatoes under cold water and pat dry. These will add a fresh burst of flavor and help form the ‘tree’ shape.
  4. Assemble the Skewers: Take a wooden skewer and thread on one slice of cucumber first to form the base. Next, add a piece of cheese, followed by a cherry tomato, and repeat layering until the skewer is full, leaving some space at the end of the skewer for handling.
  5. Chill and Serve: Once all skewers are assembled, refrigerate them for at least 15 minutes to allow flavors to meld. Serve chilled as a healthy snack or appetizer.

Notes

  • Use medium-length skewers to make the skewers easy to handle and eat.
  • You can substitute the cheese type based on preference or dietary needs, such as using a vegan cheese alternative.
  • For added flavor, drizzle with a light vinaigrette or sprinkle with fresh herbs before serving.
  • These skewers can be made ahead of time and refrigerated for up to 24 hours.
