Ingredients

Meat and Vegetables

  • 1 1/2 lbs. turkey sausage
  • 1 medium onion, chopped
  • 1 red pepper, chopped
  • 1 30 oz. frozen diced hash browns

Oils and Seasonings

  • 2 Tbsp. olive oil, plus more for hash browns
  • 1/2 tsp. onion powder
  • Salt and pepper, to taste
  • 1/2 tsp. garlic powder
  • Few dashes of Tabasco sauce (or to taste)

Dairy & Eggs

  • 2 cups cheddar cheese, grated (divided)
  • 6 large eggs, whisked
  • 1 1/2 cups milk (2% or 3%)

  • Chives, chopped

Instructions

  1. Prepare Sausage: Remove turkey sausage from their casings and cook in 1 tablespoon of olive oil in a large non-stick frying pan. Season with salt, pepper, and onion powder. Cook until browned and fully cooked through. Transfer cooked sausage to a large bowl.
  2. Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the same pan, then sauté the chopped onion and red pepper. Season with salt and pepper. Cook gently until the vegetables are translucent and tender but do not allow them to brown. Remove the vegetables and add them to the bowl with the cooked sausage.
  3. Cook Hash Browns: Cook the frozen diced hash browns according to package instructions, using additional olive oil if needed, until they are browned and heated through. Season with salt and pepper. Add the cooked hash browns to the bowl with the sausage and vegetables. Then, sprinkle in 1 1/2 cups of grated cheddar cheese and toss everything together well. Pour this mixture evenly into a sprayed 9×13 inch casserole dish.
  4. Preheat Oven: Preheat your oven to 350°F (175°C) while assembling the casserole.
  5. Prepare Egg Mixture: In a separate bowl, whisk together the milk, eggs, garlic powder, Tabasco sauce, and 1/2 teaspoon salt until well combined. Pour this egg mixture evenly over the casserole contents in the dish. Sprinkle the remaining 1/2 cup of cheddar cheese evenly on top.
  6. Bake: Place the casserole in the preheated oven and bake for 40 to 45 minutes until the eggs are set and the top is golden and bubbly.
