Ingredients

Whipped Feta

  • 6 ounces feta cheese
  • 1/4 cup plain Greek yogurt

Eggs, Greens, and Chile

  • 1/3 cup extra virgin olive oil
  • 4 large eggs
  • 1 clove garlic, minced or grated
  • 4 cups mixed baby spinach and arugula
  • Kosher salt and black pepper, to taste
  • Zest and juice from 1 lemon
  • 1 cup tender herbs, such as cilantro, parsley, basil, and dill
  • 1 Persian cucumber, thinly sliced
  • 2 tablespoons salted butter
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon paprika
  • 1 avocado, sliced
  • 2 tablespoons everything bagel spice

Instructions

  1. Prepare the Whipped Feta: In a food processor, combine the feta cheese and plain Greek yogurt until smooth and creamy. Set aside for serving.
  2. Sauté the Greens: Heat the extra virgin olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the mixed baby spinach and arugula, season with kosher salt and black pepper, and cook until just wilted, about 2-3 minutes. Remove from heat.
  3. Poach the Eggs: In a medium pot, bring water to a gentle simmer. Crack each egg into a small bowl and carefully slide into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
  4. Make the Chile Butter: In a small pan, melt the salted butter over medium heat. Add crushed red pepper flakes and paprika, stirring for about 1 minute until fragrant and the butter is infused with the spice.
  5. Assemble the Dish: Spread a generous layer of whipped feta on each serving plate. Top with sautéed greens, then arrange the poached eggs on top. Drizzle chile butter over the eggs and sprinkle with lemon zest and juice, tender herbs, sliced Persian cucumber, avocado slices, and everything bagel spice.
  6. Serve: Serve immediately while the eggs are warm and the butter is fragrant, enjoying the combination of creamy, spicy, fresh, and tangy flavors.

Notes

  • Use fresh, high-quality feta for the best flavor and creaminess.
  • Adjust the amount of crushed red pepper flakes according to your heat preference.
  • Gentle simmering is key to perfect poached eggs without overcooking.
  • If preferred, you can substitute fresh spinach and arugula with kale or chard.
  • Everything bagel spice adds a crunchy, savory topping but can be omitted or substituted with toasted sesame seeds.
