Tuscan ‘Marry Me’ Butter Beans are a creamy, comforting dish with sundried tomatoes, kale, parmesan, and tender butter beans in a luscious Tuscan-inspired sauce. Perfect as a vegetarian main or hearty side.

Ingredients

2 (15 oz.) cans butter beans, drained and rinsed (or use soaked dry butter beans)

2 tablespoons unsalted butter

4 garlic cloves, minced

½ cup organic sundried tomatoes (or roasted herb tomatoes)

1 tablespoon organic tomato paste

2 tablespoons Tuscan Marry Me blend (store-bought or homemade)

1 teaspoon sea salt

1 cup organic heavy cream

½ cup organic vegetable stock

3 tablespoons white cooking wine (optional, or substitute with vegetable stock)

½ lemon, freshly squeezed

1 cup organic chopped kale

½ cup freshly grated parmesan, plus more for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  2. Stir in sundried tomatoes and tomato paste, cooking for another 2 minutes.
  3. Add the Tuscan Marry Me blend and salt, stirring to coat the tomatoes and garlic.
  4. Pour in the heavy cream, vegetable stock, and white wine. Simmer for 5 minutes until slightly thickened.
  5. Stir in butter beans and cook for 5–7 minutes, allowing them to absorb the flavors.
  6. Add lemon juice and kale, stirring until the kale wilts.
  7. Mix in parmesan cheese and cook for 2–3 more minutes until the sauce is creamy.
  8. Remove from heat, garnish with extra parmesan, and serve warm.

Notes

For a vegan version, substitute with vegan butter, coconut cream, and dairy-free parmesan.

Spinach, Swiss chard, or arugula can be used instead of kale.

Add red pepper flakes for extra spice.

Pairs beautifully with crusty bread, pasta, or rice.
