Vegan Hot Dogs

Tender, smoky carrots marinated and cooked to perfection, nestled in a soft bun with tangy homemade relish and your favorite fixings a flavorful, healthy vegan twist on classic hot dogs.

Ingredients

8 medium carrots (about pounds), peeled and trimmed to hot dog size

¼ cup apple cider vinegar

¼ cup tamari (or soy sauce)

1 tablespoon smoked paprika

1 teaspoon garlic powder

Water, as needed

Avocado oil, for drizzling

Hot dog buns, for serving

Homemade relish (recipe below)

Desired fixings (mustard, ketchup, onions, pickles, etc.)

Instructions

  1. Combine apple cider vinegar, tamari, smoked paprika, garlic powder, and enough water to cover the carrots in a large pot or deep skillet.
  2. Add carrots and simmer uncovered 20–25 minutes until tender but firm. Drain and cool.
  3. Drizzle carrots with avocado oil and roast at 400°F (200°C) for 15 minutes, turning halfway, or grill until lightly charred.
  4. Place carrots in buns, top with homemade relish and desired fixings.
  5. Serve immediately.

Notes

Homemade relish: Mix 1 cup chopped cucumber, ½ cup chopped onion, ½ cup chopped bell pepper, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, salt and pepper; refrigerate 30 minutes.

Substitute other veggies like zucchini or parsnips.

Use soy sauce or coconut aminos instead of tamari.

Omit oil for an oil-free version.
