Vegan Snickerdoodle Energy Balls are a healthy, portable snack that tastes just like a snickerdoodle cookie. Made with almond butter, maple syrup, cinnamon, and almond flour, these no-bake energy balls are perfect for a quick energy boost or satisfying your sweet cravings.

Ingredients

1 cup almond butter (or any nut or sun butter)

¼ cup maple syrup (or agave/date syrup)

½ cup almond pulp (leftover from almond milk, or substitute with ground flaxseeds, oat flour, or coconut flour)

½ teaspoon cinnamon

1 teaspoon vanilla

¼½ cup almond flour

Optional: 3 tablespoons vegan sugar, ½ teaspoon cinnamon, melted vegan chocolate for drizzling

Instructions

  1. Mix the Base Ingredients: In a medium-sized bowl, combine almond butter, maple syrup, almond pulp, cinnamon, and vanilla. Stir until smooth.
  2. Add Almond Flour: Gradually add almond flour until the mixture holds together and is easy to form into balls. Adjust almond flour as needed for consistency.
  3. Form the Energy Balls: Roll the mixture into 1-inch balls, about 12-15 balls total.
  4. Optional Coating: Roll the balls in a cinnamon-sugar mixture for added flavor and crunch.
  5. Drizzle with Chocolate (Optional): Drizzle with melted vegan chocolate if desired and let it harden before storing.
  6. Chill: Refrigerate the balls for at least 30 minutes to firm up.
  7. Serve: Enjoy immediately or store in an airtight container.

Notes

If you don’t have almond pulp, you can substitute with ground flaxseeds, oat flour, or coconut flour.

For a protein boost, consider adding a scoop of plant-based protein powder.

Feel free to use any nut or seed butter like peanut butter, cashew butter, or sunflower seed butter.

For extra sweetness, drizzle more melted vegan chocolate or add more maple syrup.
