Ingredients

Roasted Strawberries

  • 2 lbs fresh strawberries
  • 2 Tbsp balsamic vinegar
  • 2 tsp honey

Whipped Feta Dip

  • Approx. 8 oz feta cheese (around 220 grams)
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp olive oil
  • Black pepper, to taste

For Serving

  • Crusty bread (like sourdough or baguette)
  • Fresh basil, chopped
  • Extra olive oil for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Strawberries: Wash the strawberries thoroughly and remove the stems. Slice each berry in half or quarters depending on their size. Spread the sliced strawberries evenly on the prepared baking sheet.
  3. Season and Roast Strawberries: In a small bowl, whisk together the balsamic vinegar and honey until combined. Drizzle this mixture over the strawberries and toss gently to coat. Spread the strawberries in an even layer again and roast in the oven for about 30-35 minutes, until they soften and release their juices.
  4. Make Whipped Feta: While the strawberries roast, add the feta cheese, Greek yogurt, olive oil, and black pepper to a food processor. Blend until the mixture is smooth and creamy, stopping occasionally to scrape down the sides with a spatula. Transfer the whipped feta to the refrigerator to chill for 30-60 minutes to enhance the flavors and texture.
  5. Cool Roasted Strawberries: When the strawberries are done roasting, remove them from the oven and let them cool for 5-10 minutes. Transfer the cooled strawberries along with their juices to a container and place in the refrigerator separately from the whipped feta.
  6. Serve: When ready to serve, spoon the whipped feta into a large serving bowl and top with the roasted strawberries. Garnish with freshly chopped basil, a drizzle of olive oil, and a sprinkle of black pepper. Serve alongside toasted crusty bread for dipping.
