A cozy yet refreshing gin cocktail made with honey sage simple syrup, lemon juice, and fresh sage. Sweet, herbal, and citrusy, it’s perfect for winter evenings or year-round enjoyment.

Ingredients

  • Honey Sage Simple Syrup:
  • ½ cup water
  • ½ cup honey
  • 78 fresh sage leaves
  • Winter Honey Sage Cocktail:
  • ½ oz gin
  • 1 oz honey sage simple syrup
  • ½ oz lemon juice
  • 23 fresh sage leaves
  • Extra sage leaves, for garnish

Instructions

  1. Make the syrup: Combine water, honey, and sage leaves in a saucepan. Bring just to a simmer, stirring until honey dissolves. Remove from heat and steep 15 minutes. Strain and cool.
  2. In a shaker, gently muddle 2–3 fresh sage leaves.
  3. Add gin, honey sage syrup, and lemon juice. Fill shaker with ice.
  4. Shake until well chilled, then strain into a coupe or rocks glass.
  5. Garnish with a fresh sage leaf before serving.

Notes

  • Swap gin for bourbon for a warmer flavor or vodka for a cleaner taste.
  • Top with club soda or prosecco for a sparkling version.
  • Add a splash of orange juice for extra citrus brightness.
  • Prepare honey sage syrup ahead of time and store in the fridge for up to 2 weeks.
  • Muddling sage enhances flavor but can be skipped for a lighter herbal note.
