Yogurt Bark is a simple, refreshing, and healthy frozen treat made with creamy Greek yogurt, fresh berries, honey, and a crunchy topping of almonds or sunflower seeds. This easy-to-make snack is perfect for hot summer days, and it’s customizable with various fruits and sweeteners. Ideal as a snack, dessert, or a fun treat for the whole family.
2 cups Greek yogurt (or regular plain yogurt)
1/4 cup Honey (or 1/3 cup of natural sugar-free honey)
3/4 tsp Vanilla extract
1 cup Strawberries (sliced)
1 cup Blueberries
1/4 cup Almonds (sliced or slivered; or sunflower seeds for a nut-free option)
Line a baking sheet or shallow dish with parchment paper.
In a bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth.
Pour the yogurt mixture onto the prepared baking sheet and spread it out into an even layer, about 1/4 to 1/2 inch thick.
Evenly distribute the sliced strawberries, blueberries, and sliced almonds (or sunflower seeds) over the yogurt.
Freeze for at least 3–4 hours, or until the yogurt is firm.
Once frozen, break the yogurt bark into pieces and serve immediately. Store any leftovers in an airtight container in the freezer for up to 1-2 weeks.
Swap the berries for other fruits like raspberries, blackberries, or kiwi for a different flavor.
Use sunflower seeds instead of almonds for a nut-free version.
For a vegan option, replace Greek yogurt with dairy-free yogurt and use maple syrup or other plant-based sweeteners.
