For the Garlic Tzatziki:
1 ½ cups Greek yogurt
4 cloves garlic
1 small cucumber, peeled and chopped
2 teaspoons olive oil
Juice of ½ lemon
For the Zucchini Fritters:
2 medium zucchinis, grated
1 cup fresh spinach, chopped
½ cup feta cheese, crumbled
1 egg
½ cup breadcrumbs
Salt and pepper, to taste
1 tablespoon olive oil (for frying)
Prepare the Garlic Tzatziki:
In a blender or food processor, combine Greek yogurt, garlic, chopped cucumber, olive oil, and lemon juice. Blend until smooth and creamy. Season with salt and pepper to taste.
Refrigerate while preparing the fritters to let the flavors meld.
Make the Zucchini Fritters:
Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
