Ingredients

1 ½ cups Greek yogurt

4 cloves garlic

2 medium zucchinis, grated

1 cup fresh spinach, chopped

½ cup feta cheese, crumbled

1 egg

½ cup breadcrumbs

Salt and pepper, to taste

1 tablespoon olive oil (for frying)

Instructions

  1. Prepare the Garlic Tzatziki:

    • In a blender or food processor, combine Greek yogurt, garlic, chopped cucumber, olive oil, and lemon juice. Blend until smooth and creamy. Season with salt and pepper to taste.

    • Refrigerate while preparing the fritters to let the flavors meld.

  2. Make the Zucchini Fritters:

    • Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.

    • In a large bowl, combine grated zucchini, spinach, feta cheese, egg, breadcrumbs, salt, and pepper. Stir until well combined.

    • Heat olive oil in a frying pan over medium heat.

    • Scoop spoonfuls of the fritter mixture and form into patties. Fry for 3-4 minutes on each side until golden brown and crispy.
