2 tablespoons butter
4 – 5 cups squash, sliced
¼ cup mayonnaise
2 tablespoons milk
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
⅓ cup Panko breadcrumbs
1 tablespoon butter
1 tablespoon olive oil
3 tablespoons Parmesan cheese
Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
Cook the Squash: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and cook, stirring occasionally, until it is softened, about 5-7 minutes. Once cooked, remove the squash from the heat and set it aside to cool slightly.
Prepare the Casserole Mixture: In a mixing bowl, combine the mayonnaise, milk, salt, pepper, and garlic powder. Stir until well mixed. Add the cooked squash to this mixture and stir gently to coat.
Assemble the Casserole: Transfer the squash mixture into a greased 9×9-inch baking dish or a similarly sized casserole dish.
Prepare the Topping: In a small bowl, combine the Panko breadcrumbs, 1 tablespoon of melted butter, olive oil, and Parmesan cheese. Stir until the breadcrumbs are evenly coated.
Top the Casserole: Sprinkle the breadcrumb mixture evenly over the squash mixture in the casserole dish.
Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and crispy.
Serve: Let the casserole cool for a few minutes before serving. Enjoy!
Cheese Variation: For a cheesier casserole, add shredded cheddar or mozzarella cheese to the creamy mixture.
Herb Variations: Add fresh herbs like thyme, rosemary, or basil for extra flavor.
Gluten-Free Option: Swap out the Panko breadcrumbs for gluten-free breadcrumbs to make this dish gluten-free.
