A quick and flavorful side dish featuring tender haricots verts blistered to perfection with garlic and finished with a squeeze of fresh lemon. Ready in just 15 minutes, this recipe highlights the natural crispness of French green beans with a deliciously garlicky, zesty twist.

Ingredients

Ingredients

  • 2 Tbsp olive oil (or light, neutral oil)
  • 1 lb haricots verts (trimmed French string beans)
  • 3 large garlic cloves (finely chopped)
  • 1 tsp Kosher salt
  • ¼ tsp freshly ground black pepper
  • 1 medium lemon (cut into wedges, for serving)

Instructions

  1. Heat the pan: Heat a large skillet over medium-high heat for a few minutes until very hot, then add 2 Tbsp (30ml) olive oil.
  2. Cook the haricot verts: Add the trimmed haricots verts to the hot skillet, then season them with 1 tsp Kosher salt and ¼ tsp freshly ground black pepper. Cook, stirring occasionally, until the beans are blistered on all sides, about 7-8 minutes.
  3. Season, then serve: When the beans are mostly blistered, add the finely chopped garlic and cook for 1 more minute to infuse the garlic flavor. Squeeze 1 lemon wedge over the beans, stir well to combine, and taste to adjust seasoning as needed. Serve immediately with additional lemon wedges on the side.

Notes

  • For more blistered beans, continue cooking after adding garlic, but be careful not to burn the garlic.
  • You can substitute fresh green beans if haricots verts are unavailable, though cooking time may vary slightly.
  • Use a neutral oil like canola if you prefer a lighter taste than olive oil provides.
  • Serve as a vibrant side with grilled meats or fish, or add to salads for extra texture.
