700 grams Bhetki Fish Fillet
3 tablespoons Olive Oil, divided
3 Oranges
2 tablespoons Butter
4 Cloves Garlic, minced
1 teaspoon Honey
½ cup Basil Leaves
Salt and Pepper to taste
Prepare the Fish: Pat the Bhetki fish fillets dry with a paper towel and season with salt and pepper on both sides.
Cook the Fish: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the fish fillets. Cook for about 3-4 minutes on each side or until golden brown and cooked through (internal temperature should reach 145°F). Remove the fish from the skillet and set aside.
Make the Citrus Basil Butter Sauce: In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil and the butter. Once the butter melts, add the minced garlic and sauté for about 30 seconds until fragrant.
Add the Citrus and Basil: Zest and juice the three oranges. Add the orange zest and juice to the skillet, followed by the honey. Stir to combine and let it simmer for 2-3 minutes until the sauce slightly thickens.
Finish the Sauce: Add the fresh basil leaves to the skillet and stir until wilted and fragrant. Taste and adjust seasoning with salt and pepper.
