  • 6 ounces spinach (can substitute kale)
  • 1 lime, squeezed

Instructions

  1. Make flavor base: Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 3 minutes until softened and translucent. Then add grated garlic, grated ginger, cumin, and red pepper flakes and cook for an additional 1 minute until fragrant.
  2. Add sweet potatoes and liquids: Add the peeled and diced sweet potatoes to the pot along with the vegetable broth, crushed tomatoes, drained chickpeas, salt, and black pepper. Stir to combine all the ingredients thoroughly.
  3. Add peanut butter: Bring the stew to a boil, then reduce the heat to low. Stir in the creamy peanut butter until fully incorporated into the stew. Let it simmer gently for about 20 minutes, or until the sweet potatoes are fork-tender.
  4. Add spinach: Stir in the fresh spinach leaves and cook just until they wilt, about 1-2 minutes. Taste and adjust seasoning with more salt if needed.
