Ingredients

Chicken and Seasoning

Bruschetta Mix

  • 5 fresh Roma tomatoes, diced
  • 1/2 can fire-roasted diced tomatoes (about 7 ounces)
  • 2 tablespoons extra-virgin olive oil
  • 1/2 tablespoon balsamic glaze
  • 1/4 cup freshly chopped basil
  • 4 cloves garlic, minced
  • Pinch of salt and pepper

  • 8 slices provolone cheese
  • 2 sheets puff pastry, thawed
  • 1 tablespoon dried garlic flakes
  • 1 egg, beaten
  • 1 tablespoon water

Instructions

  1. Pound the Chicken: Lay out the chicken breasts on a plastic wrap-lined wooden cutting board. Place another sheet of plastic wrap over the chicken and pound each breast to about 1/4 inch thickness for even cooking and easy rolling.
  2. Season the Chicken: In a small bowl, combine Italian seasoning, garlic powder, salt, and black pepper. Sprinkle this seasoning mixture evenly over both sides of the flattened chicken breasts.
  3. Prepare the Bruschetta Mix: Dice Roma tomatoes and chop fresh basil. Mince garlic cloves. In a bowl, combine the diced Roma tomatoes, fresh basil, minced garlic, half of the canned fire-roasted diced tomatoes, olive oil, balsamic glaze, and a pinch of salt and pepper.
