These Air Fryer Oatmeal Cookies are a quick and healthy treat made with wholesome rolled oats, natural sweeteners like maple syrup, and your choice of mix-ins such as chocolate chips or nuts. They require minimal ingredients and use the air fryer for a fast, convenient baking process that yields slightly golden, chewy cookies perfect for a nutritious snack or dessert.

Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon

Wet Ingredients

  • 3 tablespoons maple syrup
  • 2 tablespoons unsweetened applesauce

Optional Mix-ins

  • 2-3 tablespoons chocolate chips, chopped pecans or walnuts, raisins, or dried cranberries

Instructions

  1. Prepare Oats: Add the rolled oats to a blender or food processor and pulse for about 5-6 seconds to break them down slightly. Aim for a mixture with some floury bits and some whole oats without turning it fully into flour.
  2. Mix Ingredients: Transfer the blitzed oats to a medium bowl. Add the maple syrup, unsweetened applesauce, baking soda, cinnamon, and your choice of mix-ins. Stir well until the mixture is evenly combined.
  3. Form Cookies: Line the air fryer basket with parchment paper to prevent sticking. Divide the cookie batter into 7 portions for smaller cookies or 3-4 portions for larger cookies. Roll each portion into a ball, then flatten and shape it with your hands before placing them evenly spaced in the basket.
  4. Air Fry Cookies: Set the air fryer temperature to 325°F (163°C) and cook the cookies for 4-6 minutes until they are slightly golden around the edges. The cookies will look a bit underdone initially, but they will firm up as they cool.
  5. Cool and Serve: Carefully remove the basket from the air fryer and let the cookies cool in the basket for at least 10 minutes. After cooling, transfer the cookies to a rack to cool further or enjoy them warm.

Notes

  • Do not over-process the oats; a coarse texture is ideal for texture in cookies.
  • Cookies will seem soft right out of the air fryer but will set properly as they cool.
  • You can customize the cookies by adding your favorite mix-ins like nuts, dried fruit, or chocolate chips.
  • Use parchment paper designed for air fryers to prevent sticking and facilitate clean-up.
  • The air frying time may vary slightly depending on your air fryer model; keep an eye on the cookies as they cook.
