  1. Season the vegetables: Add the bell peppers, red onion, and zucchini pieces to a large mixing bowl. Drizzle with avocado oil, then sprinkle Old Bay seasoning and garlic powder evenly over the vegetables. Toss thoroughly to coat all pieces evenly. (Note: Cutting the zucchini slightly larger helps prevent overcooking in the air fryer.)
