Ingredients

Dry Ingredients

  • 1 cup finely ground almond flour (packed)
  • 1/4 teaspoon salt

Wet Ingredients

  • 3 Tablespoons ghee (softened butter or vegan butter, Earth Balance recommended)
  • 3 Tablespoons maple syrup
  • 1/2 teaspoon vanilla extract

Other

  • 3 Tablespoons jam (homemade or store-bought)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookies.
  2. Prepare Baking Sheet: Line a baking sheet with parchment paper or use an un-greased baking stone to prevent the cookies from sticking.
  3. Mix Dough: In a small bowl, combine the almond flour, softened ghee, maple syrup, vanilla extract, and salt. Mix thoroughly until a cohesive dough forms. It may seem a bit dry at first, so continue mixing until fully combined.
  4. Scoop and Shape: Using a tablespoon, measure out the dough and roll each portion into a ball. Place the dough balls on the prepared baking sheet, spacing them evenly.
  5. Create Thumbprints and Fill: Press your thumb or finger gently into the center of each dough ball to make an indentation. Fill each thumbprint with 1/2 to 1 teaspoon of your chosen jam.
  6. Bake Cookies: Bake the cookies in the preheated oven for 10-12 minutes or until the bottoms turn a light golden brown, indicating they are cooked through.
  7. Cool: Remove the cookies from the oven and allow them to cool on the baking sheet for 10 minutes. Then transfer them to a wire rack to cool completely before serving.
  8. Store: Store the cooled cookies in an airtight container in the refrigerator for up to one week, or freeze them layered with parchment paper for up to three months.

Notes

  • You can substitute ghee with softened butter or vegan butter according to preference.
  • Use any flavor of jam to customize the taste of your cookies.
  • Ensure almond flour is finely ground for the best texture.
  • Store cookies properly to maintain freshness and prevent them from becoming soggy.
