Fluffy apple cinnamon pancakes infused with warm spices and fresh shredded apples, perfect for a cozy breakfast or brunch. These pancakes are tender, mildly sweet, and bursting with autumnal flavor, cooked to golden perfection on a griddle or non-stick pan.

Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp. baking powder
  • 3 Tbsp. cane or granulated sugar
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt

Wet Ingredients

  • 1 ½ cups buttermilk
  • 1 large egg
  • 3 Tbsp. melted unsalted butter, slightly cooled
  • 1 ½ tsp. pure vanilla extract

Additional

  • ¾ cup peeled and shredded sweet apples (such as Gala or Fuji)
  • Cooking spray or butter for cooking

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt to combine all your dry ingredients evenly.
  2. Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth and homogenous.
  3. Mix Batter: Add the wet ingredients to the dry ingredients and gently stir with a rubber spatula or wooden spoon just until combined. The batter will be thick and slightly lumpy, so avoid overmixing to keep pancakes tender.
  4. Add Apples and Rest: Fold in the shredded apples carefully to distribute them through the batter. Let the mixture rest for 5 minutes to improve texture and flavor meld.
  5. Preheat Pan: Heat a griddle or non-stick skillet over medium heat and lightly grease with cooking spray or butter to prevent sticking.
  6. Cook Pancakes: Pour 1/4 cup portions of batter onto the pan, gently spreading into rounds. Cook until the edges set and the underside is golden brown, about 2-3 minutes.
  7. Flip and Brown: Flip pancakes carefully with a spatula and cook the other side until golden brown, another 2 minutes. Adjust heat if pancakes brown too quickly.
  8. Serve: Transfer cooked pancakes to a platter and repeat with remaining batter, making approximately 14-15 pancakes in total. Serve warm with your favorite toppings.

Notes

  • Do not overmix the batter; some lumps are okay to keep pancakes fluffy.
  • Use firm, sweet apples like Gala or Fuji for the best flavor and texture.
  • Adjust cooking heat as needed to avoid burning pancakes before they cook through.
  • If buttermilk is unavailable, make a substitute by adding 1 ½ Tbsp. lemon juice or vinegar to 1 ½ cups milk and letting it sit for 5 minutes.
  • For a dairy-free version, substitute buttermilk and butter with plant-based alternatives.
