Ingredients

Dough and Filling

  • 3 cans Cinnamon Rolls (8 count each)
  • 1 can Apple Pie Filling (about 21 oz)

Sugar Coating

  • 1 cup granulated sugar
  • 2 teaspoons cinnamon

Brown Sugar Glaze

  • 1/2 cup unsalted butter (1 stick)
  • 1 cup light brown sugar, packed
  • 1 teaspoon cinnamon

Icing

  • Reserved icing from the cinnamon rolls

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and generously spray a bundt pan with cooking spray to prevent sticking.
  2. Prepare Apple Filling: Pour the apple pie filling into a medium bowl. Using a sharp knife, chop the apples into smaller pieces to distribute evenly throughout the bread. Set aside.
  3. Mix Sugar and Cinnamon: Combine the granulated sugar and 2 teaspoons of cinnamon in a bowl or ziplock bag; this will be used to coat the cinnamon roll pieces.
  4. Prepare Cinnamon Rolls: Open the cinnamon rolls and carefully reserve the icing packet for later use. Cut each cinnamon roll into four pieces.
  5. Coat Dough Pieces: Toss the quartered cinnamon roll pieces into the cinnamon sugar mixture, ensuring each piece is evenly coated. Discard any leftover sugar mixture.
  6. Layer Dough and Apples: Place one-third of the coated cinnamon roll pieces in the bottom of the bundt pan. Then layer half of the chopped apples on top. Add another one-third of cinnamon roll pieces, followed by the remaining apples, and finally the last third of cinnamon roll pieces on top.
  7. Make Brown Sugar Glaze: In a small saucepan over medium heat, melt the unsalted butter. Add the light brown sugar and 1 teaspoon of cinnamon, stirring occasionally until the mixture starts to bubble.
  8. Add Glaze to Pan: Pour the hot brown sugar glaze evenly over the layered cinnamon rolls and apple mixture in the bundt pan. Gently tap the bundt pan on the counter a few times to help the glaze seep down through the layers.
  9. Bake: Bake the monkey bread in the preheated oven for approximately 55 minutes, or until the topping is bubbly and the dough is cooked through.
  10. Cool and Invert: Remove the bundt pan from the oven and let cool for 15 minutes. Then place a cake plate over the bundt pan and carefully invert it to release the monkey bread onto the plate.
  11. Drizzle Icing: Drizzle the reserved cinnamon roll icing evenly over the top of the monkey bread before serving.
