Ingredients

Beef Marinade

  • 3 tablespoons sunflower oil
  • 3 cloves garlic, minced

  • 1 pound beef sirloin steak

Salad Ingredients

  • 1 tablespoon sunflower oil
  • 1 small onion, sliced very thinly
  • 2 green onions, chopped (both white and green parts)
  • 2 cloves garlic, minced
  • 1/4 cup roasted peanuts, roughly chopped
  • 3 cups arugula

Dressing

  • 2 tablespoons fresh lime juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2-3 drops of hot sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper

Instructions

  1. Prepare the Beef Marinade: In a bowl, combine 3 tablespoons sunflower oil, minced garlic, 1 tablespoon sesame oil, sugar, and kosher salt. Mix well to create the marinade.
  2. Marinate the Steak: Add the pound of beef sirloin steak to the marinade, ensuring the meat is fully coated. Let it sit for at least 20 minutes to absorb the flavors.
  3. Cook the Beef: Heat 1 tablespoon sunflower oil in a skillet over medium-high heat. Add the marinated beef and sear until cooked to your preferred doneness, about 3-4 minutes per side. Remove from heat and let rest.
  4. Sauté Onions and Garlic: In the same skillet, add the thinly sliced small onion, chopped green onions, and 2 cloves minced garlic. Sauté for 2-3 minutes until slightly softened and fragrant.
