Ingredients

Protein & Vegetables

  • lb. lean ground turkey (or ground chicken)
  • 1 clove garlic, minced
  • 4 green onions, thinly sliced
  • 1 8 oz can sliced water chestnuts, drained and coarsely chopped
  • 12 Bibb/Butter lettuce leaves

Sauces & Seasonings

  • 1 tablespoon olive oil
  • 1/8 teaspoon ground ginger
  • 3 tablespoons hoisin sauce
  • 2 tablespoons lower-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons roasted red chili paste
  • Pinch of salt

Instructions

  1. Cook the Turkey Mixture: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey, minced garlic, and ground ginger to the pan. Cook for about 6 minutes, stirring occasionally and crumbling the meat until the turkey is thoroughly browned and cooked through.
  2. Combine Ingredients: Transfer the cooked turkey mixture to a large bowl. Add the thinly sliced green onions and coarsely chopped water chestnuts. Stir well to combine and set aside.
  3. Prepare the Sauce: In a small bowl, whisk together hoisin sauce, lower-sodium soy sauce, rice vinegar, and roasted red chili paste until smooth. Drizzle this sauce over the turkey mixture and toss thoroughly to coat all ingredients evenly.
  4. Assemble the Wraps: Spoon about ¼ cup of the turkey mixture onto each Bibb lettuce leaf. Serve immediately and enjoy these fresh and flavorful wraps.

Notes

  • For a spicier kick, increase the roasted red chili paste to taste.
  • Substitute ground chicken if preferred, maintaining the lean protein profile.
  • Bibb lettuce leaves are preferred for their softness and size, but iceberg or romaine can be used as alternatives.
  • These wraps can be served cold or warm.
  • Make sure to drain the water chestnuts well to avoid soggy wraps.
