Avocado Bruschetta with White Beans is a fresh and wholesome twist on the classic Italian appetizer. This recipe features toasted whole wheat sourdough bread topped with creamy mashed avocado, marinated white beans, and juicy cherry tomatoes, all enhanced by garlic and a splash of citrus. Perfect as a quick snack or a light lunch, it combines nutritious ingredients for a satisfying and flavorful dish.

Ingredients

For the Toast

  • 4 thick slices whole wheat sourdough bread (or similar)
  • Extra virgin olive oil, for drizzling
  • 1 large garlic clove

For the Topping

  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 cup cherry tomatoes, chopped
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 medium ripe avocados, pitted and peeled
  • 1 tablespoon lemon or lime juice

Instructions

  1. Heat the Skillet: Heat a cast iron skillet over medium-high heat to prepare for toasting the bread.
  2. Toast the Bread: Lightly drizzle both sides of the bread slices with extra virgin olive oil. Place the bread in the hot skillet and toast until nicely browned, about 4 to 5 minutes per side. Once toasted, transfer the bread to a board or platter.
  3. Garlic Rub: Halve the garlic clove widthwise to create a flat surface. While the toast is still hot, rub the cut side of the garlic on both sides of each slice until fragrant to infuse a subtle garlic flavor.
  4. Prepare the Bean-Tomato Mixture: In a medium bowl, combine the drained and rinsed white beans with chopped cherry tomatoes. Season with pinches of fine sea salt and freshly ground black pepper. Set aside to marinate and develop flavor while you prepare the avocado.
  5. Mash the Avocado: In a separate shallow bowl, mash the avocados with a fork until smooth but still slightly chunky. Add lemon or lime juice to brighten the flavor and season with salt to taste.
  6. Assemble and Serve: Spread the mashed avocado evenly over the toasted bread slices. Top with a generous amount of the bean and tomato mixture. Serve immediately for the best texture and freshness.

Notes

  • You can substitute the whole wheat sourdough with any hearty bread of your choice.
  • For extra flavor, drizzle a little more olive oil on top before serving.
  • This recipe is best served fresh to enjoy the contrast between crispy toast and creamy avocado.
  • Leftover toppings can be stored separately in the fridge for up to 1 day.
  • Consider adding fresh basil or parsley for an herbal note if desired.
