A delightful and fresh Avocado Toast recipe featuring creamy whipped goat cheese combined with mashed avocado and diced red onion, served on toasted rustic sourdough bread. Garnished with edible flowers and seeds for added texture and flavor, making it perfect for a healthy breakfast or brunch.

Ingredients

Cheese Mixture

  • 8 oz. whipped cream cheese
  • 4 oz. goat cheese

Avocado Mixture

  • 1 small red onion, diced
  • 3 large avocados
  • Salt & pepper, to taste

Bread and Garnishes

  • 1 French sourdough loaf (or any rustic bread, enough for 10 1-inch slices)
  • Edible flowers (optional)
  • Poppy seeds (optional, just a sprinkle)
  • Sesame seeds (optional, just a sprinkle)

Instructions

  1. Prepare the whipped goat cheese: In a mixing bowl, thoroughly combine 8 oz. of whipped cream cheese with 4 oz. of goat cheese until smooth and evenly mixed. Set this mixture aside for topping the toast later.
  2. Make the avocado topping: Peel and pit 3 large avocados, then mash them in a mixing bowl using a potato masher until smooth but still slightly chunky. Dice 1 small red onion finely and add it to the mashed avocado. Season with a generous sprinkle of salt and pepper, then stir to combine. Transfer this avocado mixture into a container and press cellophane wrap directly onto the surface to prevent browning.
  3. Toast the bread: When you’re ready to serve, slice the French sourdough loaf into 10 slices about 1 inch thick. Place the slices on a baking sheet and toast them in a preheated oven at 400°F (204°C) for 5-7 minutes until golden and crisp.
  4. Assemble the avocado toast: Spread each warm toasted bread slice liberally with the whipped goat cheese mixture. On one half of the slice, sprinkle a small amount of edible flowers if using. On the other half, spoon a generous amount of the avocado and onion mixture. Optionally, finish by sprinkling sesame seeds and poppy seeds on top for added texture and flavor.

Notes

  • Pressing plastic wrap onto the avocado helps prevent browning and keeps the mixture fresh.
  • You can substitute rustic bread with whole wheat or multigrain bread, but adjust toasting time accordingly.
  • Edible flowers add a beautiful aesthetic but can be omitted if not available.
  • For a dairy-free option, substitute cheeses with a vegan cream cheese and spread.
  • The recipe serves 10 slices, making it ideal for a brunch party or light lunch.
