Baked Breakfast Apples is a warm and comforting morning treat featuring tender apples filled with a cinnamon-spiced oatmeal mixture, nuts, and raisins. This wholesome and naturally sweet recipe is perfect for a cozy breakfast or brunch, topped with your favorite creamy garnish.

Ingredients

Fruit

  • 4 apples
  • 2 Tbsp lemon juice (about 1/2 lemon)

Oatmeal Filling

  • 1 cup old fashioned rolled oats
  • 1 cup milk (any kind of milk will work)
  • 1/4 tsp cinnamon
  • 2 Tbsp chopped walnuts
  • 2 Tbsp raisins

Toppings

  • Brown sugar (or maple syrup, or honey) to taste
  • Whipped cream (or yogurt, crème fraîche, or half and half) for serving

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the apples.
  2. Soak Oats: In a small bowl, mix the rolled oats, milk, and cinnamon. Let this mixture sit for about an hour to allow the oats to absorb the milk and soften. This step can be done the night before for convenience.
  3. Prepare Apples: Slice off the top quarter of each apple and carefully remove the core using a paring knife and spoon. Widen the cavity slightly to accommodate more oatmeal. Brush the apple interiors with lemon juice to prevent browning.
  4. Fill Apples: Combine the soaked oatmeal mixture with chopped walnuts and raisins, then scoop it into each apple, pressing down gently to fill completely.
  5. Bake: Place the stuffed apples upright in a baking dish. Pour about half an inch of hot water into the dish to create steam and keep the apples moist. Cover the dish with foil and bake for 40 minutes, or until the apples are tender and the filling is heated through.
  6. Serve: Remove the foil and serve the baked apples immediately. Top with brown sugar or your choice of sweetener and finish with a dollop of whipped cream, yogurt, crème fraîche, or half and half.

Notes

  • For added flavor, sprinkle extra cinnamon or nutmeg on top before baking.
  • You can substitute walnuts with pecans or almonds based on preference.
  • If you prefer a vegan option, use plant-based milk and a non-dairy whipped topping.
  • Prepare the oats soaking step overnight to save time in the morning.
  • Ensure apples are firm and not overripe to hold their shape during baking.
