Ingredients

  • 9 flour tortillas (about 8″ diameter)
  • Homemade Greek yogurt ranch dressing (for serving)

Instructions

  1. Prepare the filling: Preheat your oven to 425°F. In a large bowl, mash the softened cream cheese with a spatula until smooth and spreadable. Add buffalo wing sauce, minced green onion, minced garlic, ranch seasoning, kosher salt, and black pepper. Stir together—though it may look separated initially, it will come together as you mix. Fold in the shredded chicken and shredded cheeses until fully combined.
  2. Warm the tortillas: To prevent cracking when rolling, warm the tortillas so they become pliable. You can either heat them in a large pan over medium-high heat for about 15 seconds on each side or wrap in a damp paper towel and microwave for 30-45 seconds. Warm tortillas in batches to keep them from cooling before assembly.
  3. Assemble the taquitos: Place about 3-4 tablespoons of the buffalo chicken mixture in a line along one end of each warmed tortilla, leaving space around the edges to avoid overflow. Roll the tortilla tightly, ensuring the finished edge is on the bottom to seal the taquito. Press down slightly to compact. Repeat for all 9 tortillas.
