This Baked French Toast Casserole is a warm, comforting breakfast dish featuring tender Hawaiian bread soaked in a cinnamon-vanilla custard and topped with a buttery, cinnamon-sugar crumb topping. Perfect for a weekend brunch or holiday morning, it’s easy to prepare ahead and bake to golden perfection.

Ingredients

For the Casserole

  • Butter or nonstick spray (for greasing the pan)
  • 8 ounces Kings Hawaiian Bread (half a loaf), torn or cut into 1-inch pieces
  • 4 eggs
  • 1 1/4 cup nonfat milk
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon

For the Topping

  • 1/4 cup flour
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/4 cup cold butter, cut into small pieces

Instructions

  1. Preheat and Prepare the Dish: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish thoroughly with butter or nonstick spray to prevent sticking.
  2. Add Bread to Dish: Place the torn or cut Hawaiian bread pieces into the prepared baking dish, filling it evenly to the top for a full, compact casserole.
  3. Make Custard and Soak Bread: In a medium mixing bowl, whisk together 4 eggs, 1 1/4 cups nonfat milk, 1/4 cup granulated sugar, 1/4 cup packed brown sugar, 1 tablespoon vanilla extract, and 2 teaspoons ground cinnamon until the mixture is fully combined. Pour this custard evenly over the bread in the baking dish. Press down firmly on the bread pieces so they absorb the custard well for a rich texture.
  4. Prepare the Topping: In a small bowl, combine 1/4 cup flour, 1/4 cup packed brown sugar, 1 teaspoon ground cinnamon, and 1/8 teaspoon salt. Cut in 1/4 cup cold butter using a pastry cutter or fork until the mixture forms coarse crumbs. Sprinkle this crumbly topping evenly over the soaked bread.
  5. Bake the Casserole: Place the dish uncovered in the oven and bake for 40-50 minutes or until the top is golden brown and the center of the casserole is set and does not jiggle when you gently shake the dish.
  6. Rest and Serve: Remove from the oven and let the casserole rest for 5 minutes before serving to allow it to set further and cool slightly for easier slicing.

Notes

  • You can prepare this casserole the night before by assembling it and refrigerating it covered, then bake in the morning, adding a few extra minutes to the baking time.
  • Use day-old or slightly stale bread for best texture as it soaks up the custard better.
  • Feel free to add a handful of raisins or chopped nuts to the bread mixture for added texture and flavor.
  • This recipe can be doubled to fit into a 9×13-inch pan if serving more people.
  • Serve with maple syrup, fresh fruit, or a dusting of powdered sugar for extra sweetness.
