Ingredients

Wet Ingredients

  • 1 medium banana (mashed)
  • 1/2 cup almond milk
  • 3 tablespoons nut butter (peanut butter or almond butter works)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup flour (all-purpose, whole wheat, pastry flour, or gluten free 1-to-1 substitute)
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • Pinch salt
  • 1/2 teaspoon cinnamon

For Coating

  • 1/2 cup sugar
  • 1/2 tablespoon ground cinnamon
  • Cooking spray

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350 degrees F. Grease a 6-cavity donut pan thoroughly with cooking spray to ensure easy release after baking.
  2. Mix wet ingredients: In a large bowl, mash the banana until only a few lumps remain. Add almond milk, nut butter, maple syrup, and vanilla extract. Stir well until all wet ingredients are fully combined.
  3. Combine dry ingredients: Sift the flour, baking soda, baking powder, salt, and cinnamon over the wet ingredients. Gently fold the mixture together until just combined, avoiding overmixing to maintain a tender donut texture.
  4. Fill donut pan: Evenly spoon the batter into the prepared donut cavities, filling each about three-quarters full to allow room for rising.
  5. Bake the donuts: Place the pan in the oven and bake for 15 to 20 minutes, or until the donuts are golden brown and a toothpick inserted in the center comes out clean. Remove from oven and allow to cool slightly in the pan.
  6. Cool and coat: Carefully remove the donuts from the pan and transfer them to a wire rack to cool completely. Mix the sugar and cinnamon in a shallow bowl. Lightly spray each cooled donut with cooking spray and roll it in the cinnamon sugar mixture until coated evenly.
  7. Serve and enjoy: Your baked vegan donuts are now ready to enjoy as a delicious, guilt-free treat!

Notes

  • These donuts are best eaten the same day but can be stored in an airtight container for up to 2 days.
  • Use gluten-free flour to make the recipe gluten free.
  • You can substitute almond milk with any other plant-based milk.
  • For nut allergies, try sunflower seed butter or tahini instead of nut butter.
  • Ensure donuts cool completely before coating to avoid sugar melting away.
